Halloween family party!

hey everyone, recently we had a big family party to celebrate Halloween.  I don't have many pictures because I was TOO Busy!!!  So I am begging pictures from my kiddos.....

Please send me more pictures. 

First off we had a Rib contest for the adults.  I wanted to get judges, but was voted down.  so we just judged among ourselves. 

Demi even made a rack of ribs.  she kept trying to get me to look at her ribs.  I should have figured out something was up! 

all the ribs were cover in foil, with a A, B, C, or D in front of them.  I was elected to take the foil off.  Hmmmmm,  I didn't expect anything! 


I gave the appropriate reaction!  hahahaha......

I continued to take off the covers......


  Can you see it?  that rat!!!!  That one really got me.  Oh how I love my children!!! 

All the ribs were wonderful!  Yum, yum, yum!!!!!  And guess who won?  Me!  How is that for getting even?  I did bow down, and let my son in law win the prize.  A Halloween black cat and pumpkin salt and pepper shakers. 

Do you want the recipe?  please go to Following inn My Shoes she has the recipe on her blog.  I did add a little Montreal Steak Seasoning. I used Kroger brand of hickory smoke flavor BBQ sauce.  I love Famous Dave's sauces.  I didn't have any so I just used what I had. 

this recipe makes the meat so tender, it literally falls off the bone.  I did two rack because I was worried there wouldn't be enough.  one was spare ribs and the other was country style.  I did one rack on Friday and the other Saturday morning.  on the country style, (the ones I did on Friday) I stopped where you have to put them under the broiler for a few minutes.  I did that part on Saturday, just before our dinner.  they were just as good as the other rack.

Chalupa

What in the heck is chalupa?  Yummy, delicious, want again and again food!  I have made the recipe forever and made it again the other day for Ashton and his family.  soooooo good.....



darn if I didn't get a picture of the finished dish!  sorry.  The onion is from Elena's garden.  sooooo sweet.

Chalupa
 
1 3 1/2 lb pork roast or beef roast, or a mixture of both
2 cup dry pinto beans, or 3 cans of pinto beans
4 cloves of garlic, minced
2 tablespoons chili powder
1 teaspoon oregano
1 tablespoon cumin
1 small can diced green chilies
1 small can picante sauce ( I used homemade salsa!)
water enough to cover the roast 3/4 the way up
 
Put all ingredients in a dutch oven pot. olace in the oven at 350 degrees for 5 hours.  Check every 2 hours for water level.  add water if needed.  After 5 hours, remove roast, shred and place back into the pot.  stir well.  Bake for another hour. 
 
if using a crock pot, do the same thing, but cook on medium for 6 hours.  if using canned beans, it will not take as long.  still shred the meat and cook for another hour.
 
to serve:  place a handful of chips on your plate.  add the chalupa over the chips.  top with lettuce, chopped tomatoes, grated cheese, sour cream, salsa, and chopped onions.  also great in flour tortiallas and rolled up like a burrito.  or tacos!  yum!!!

Waffle Love! Oh my!

Hi everyone!  My daughter has been telling me I have to try these waffles.  It's a food truck imported from UT.  Waffle Love They were parked near by my home recently and decided I have to see what all the hype is about. 

 
 
the recipe is liege waffles or Belgium waffles.  there are lots of recipes online.  they all seem to use pearl sugar.  what happens is the pearl sugar gets added to the batter.  then when the waffle is cooked, the sugar melts and crystalizes on the outside of the waffle making is crunchy, and sweet, and well, totally amazing!  I mean REALLY amazing.  I had no idea.....
 
I bought raspberries and cream for my mother in law




and strawberries, cream and biscoff spread  OH. MY. GOODNESS!!!  didn't even know this stuff existed.  I am going to look at the grocery store, next time I go. 



Like I said, I have been exploring recipes all afternoon.  I think I will be experimenting on Bruce.  I don't think he will complain!  LOL......  My daughter was right.  good stuff.

Yummy, Yummy Hamburgers!

Hi everyone!  A month or so ago, Toni said she heard on the news about hamburgers made with Krispy Kreme doughnuts.  Someone in CA was serving hamburgers with doughnuts at the bun.  Hmmmmmmm...... really? 

fast forward a couple of weeks.  I am watching US of Bacon  Yep there really is a show dedicated to bacon!  LOL..... 

anyway, I am watching the show and they start talking about a restaurant in Atlanta, GA.  they serve a hamburger with donuts as the  bun.  What? for real? 

It is based on a hamburger that Luther Van Dross loved.   Now I was glued to the TV.  I wanted to see what this hamburger looked like. 

It looked YUMMY!  So I took notes.  Talked to Toni, and we decided to experiment. 


So she cooked the hamburgers.  she added sharp cheddar cheese slices.  She also grilled the donuts.  I don't think they were grilled on the show.  but I think it added another layer of flavor. 



I had cooked some bacon, and caramelized some onions. 


And here you go!  It was definitely restaurant quality.  It sure isn't something I would serve frequently.  It's high in calories.  But let me assure you, IT'S PICKIN GOOD!!!!  I mean REALLY good! 


It has the sweet and salty thing going on. 

So here is our take of a Luther burger. 


Ingredients:

hamburger, Toni used lean, she made the patties

doughnuts, we used Krispy Kreme

4 onions, sliced and caramelized

bacon, 2 slices per hamburger - cooked

cheese,  we used sharp cheddar

BBQ sauce, it is served on the side - we used famous Dave's


there you go!  if you try it, let me know.  I promise, you will like it!  Yum! 

Our next adventure? homemade really good salsa and cookies made like Oreganos!  chocolate chip cookies cooked in a miniature iron skillet.

Party, Party, Party!

Saturday Mom and Dad had all the adults over for Dad's famous hamburgers. They are the best! after dinner we played CLR and Poker. I won the first hand at poker. yeah me! I had to take a pic of my winning hand. I held my own in poker. but didn't win at all at CLR. oh well..... Cindy or Keith won!
Harriet won at CLR. it was so unexpected. she didn't have any nickels and then she did. I think she was very surprised. we all were. but it was lots of fun.....

here is mom and dad preparing the food. Dad is the best BBQ cook. his hamburgers are always so juicy and moist. They are the best...
Oh, the reason for the party? because we wanted to! LOL!
